Pancake Day: What is a simple pancake recipe and how to cook?

This week it is Shrove Tuesday – perhaps better known as Pancake Day – with people across the country taking the opportunity to tuck into a batch of their favourite pancakes, as is the tradition on this day.

Whether you prefer sweet or savoury fillings, or you just like to cover your pancakes in a load of lemon and sugar, it’s always a good excuse to indulge before Ash Wednesday and the start of Lent.

And while you can buy pancakes and simply add your favourite toppings, it’s far more fun to make them yourself and then customise them as you wish.

Just what is the recipe for pancakes – and how do you make them?

What is an easy recipe for pancakes and what flour should you use?

There are plenty of variations on the pancake recipe – including fluffy American style, vegan and even those for those who don’t have any eggs or butter to hand.

For the more traditional crepe-like pancake you should use plain flour – or all-purpose flour – but there are alternatives to explore, such as gluten-free recipes which would require a different type of flour.

For those wanting to create American-style fluffy pancakes, then you would need to incorporate the use of self-raising flour and baking powder.

The classic (not to mention easy) pancake recipe looks a little like this.

  • 125g plain flour
  • one egg
  • 300ml milk
  • pinch of salt
  • butter or oil for frying


  • Sieve the flour and salt into a bowl and make a well in the centre.
  • Whisk the egg and a little of the milk in a separate bowl.
  • Pour into the well and whisk with a little of the flour.
  • Add half of the remaining milk, gradually combining it with the rest of the flour until you have a smooth batter.
  • Stir in the rest of the milk and leave to stand for half an hour.
  • Brush a frying pan with a little oil, ladle two or three tablespoons of batter into the pan and tilt it so it is spread out evenly.
  • Cook over a medium to high heat for around 45 seconds to a minute until the edges start to curl.
  • Flip it over (you can either toss it or use a spatula) and do the same on the other side.
  • Add your favourite toppings, eat and enjoy!
